The recipe below was sent to me by Anna.  It really is delicious.

 
Smokey bacon and tomato soup
 
2 tbsp olive oil
1 onion chopped
2 celery sticks, chopped
100g smoked bacon rashers, diced
14oz can chopped tomato
1/4 pt chicken stock
1 tbsp tomato puree
 
Heat oil in pan, Add the bacon, the onion, celery and cook until the onion is softened and bacon cooked through.
Stir occasionally.
Add chopped tomatoes, chicken stock and tomato puree to the pan, stirring to combine.
Bring to a simmer and cook for another few minutes until all the flavours combine.
Then whiz with a hand blender/food processer for as little or much as you prefer.
 
 

Fast Banana Bread

I keep a look out for fast recipes for busy mums. Here is one of my favourites given to me by a very dear friend.

Ingredients
1 Tablespoon cooking oil
2-3 Tablespoons golden syrup
5 oz Sugar
2 oz soft margerine
3 eggs
4 bananas
8 oz plain flour (I use wholemeal)
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon bicarbonate of soda

Mash together with potato masher (yes really).

Bake for 1 hour in a 2lb loaf tin at 180 degrees C (160 degrees C fan oven). Check if done after 45 minutes by inserting a clean knife into centre of cake. If it comes out pretty clean cake is done.

My friend Susan gave me this years ago.

By the way I cook with butter and wholemeal flour, but I’ll give the recipe as it was given to me.

4oz Margerine
4oz sugar
2tbsp treacle
8oz self raising flour
1/2 tsp ground ginger
1/4 tsp cinnamon
1 egg
1/2 cup water

Melt margerine, sugar and treacle.
Mix dry ingredients and add to treacle mix.
Beat in egg and lastly hot water.
Mix well and pour into greased and lined 2lb loaf tin.
Bake in moderate oven (180 centigrade) for 3/4 hour. (I use 160 centigrade with my fan oven).
